I have made it countless times!<br /><br />Bratwurst Stew<br /><br />2 10 3/4 oz. cans fat-free chicken broth<br />4 medium sized carrots, sliced<br />2 ribs celery, cut in chunks<br />1 medium-sized onion, chopped<br />1 tsp dried basil<br />1/2 tsp garlic powder<br />3 cups chopped cabbage<br />2 1-lb cans great northern beans, drained<br />5 fully cooked bratwurst links, cut into 1/2" slices<br /><br />1. Combine all ingredients in slow cooker.<br />2. Cook on high 3-4 hours, or until veggies are tender.<br /><br />My husband doesn't eat pork, so I usually make it with turkey sausage instead of bratwurst. In fact, I just shredded some meat that has been cooking all day in it. It was a 3 1/2 lb. chuck roast that I put a TON of spices on and just cooked it all day and shredded it. 1.5-2lbs pork ...Crock Pot Asian Peanut Butter Pork<br /><br />1.5-2lbs pork tenderloin<br />1 onion, sliced in rings<br />1/4 cup soy sauce (I used La Choy; it's gluten free)<br />1/4 cup brown sugar<br />3 tablespoons white wine vinegar<br />3 tablespoons water<br />2 garlic cloves, chopped<br />1/2 cup creamy natural peanut butter<br />2 tablespoons chopped peanuts (garnish; optional)<br />1 lime, cut in wedges (garnish; optional)<br />Use a 4-6 quart crockpot. Put onion slices into the bottom of your crockpot. Put the pork on top. Add brown sugar, soy sauce, vinegar, water, garlic, and peanut butter. No need to stir--the peanut butter needs to melt before you can do so. Cover and cook on low for 8 hours, or on high for 4-6. The pork will be more tender the longer you cook it. 1 hour before serving, flip the meat over in the crockpot to allow the other side to soak up the peanutbuttery goodness. Garnish with chopped peanuts, and serve with lime wedges. The lime juice mixed with the peanut butter is delicious.<br /><br /><br />This is one of my favorites! I serve it over rice and make sandwiches the next day with the leftovers on toasted bread!
