"Eastern style pork BBQ is a “modified whole hog”. While there technically is no such term, we feel like it best represents our product. We utilize the shoulders and the hams, which produce a nice yield between the fattier shoulder and the leaner ham. True eastern BBQ usually cooks whole, halved, or quartered pigs.
Piedmont style pork shoulder is slow cooked and smoked with Hickory wood, the same way our Eastern style is cooked. It is also chopped to the same consistency. However, our Piedmont style is just shoulder meat, therefore is more naturally moist due to the higher fat content. For that reason, and to preserve the Lexington way of serving BBQ, we have not added any sauce to the product. You are free to add as much or as little as needed to suit your taste."

My take. We really enjoyed the Piedmont meat the best. It had a good taste and was very tender. The eastern was also very tender but we all agreed that it had a bit to much of a vinegar taste to it but I am sure some people would love it as it is a matter of personal taste. On the flip side we preferred the Eastern coleslaw. The Piedmont was good but different that what we are used to.
carolina bbq is good and something definitively worth trying. It would be great for an upcoming superbowl party.
